Carole Jo Hernandez

Carole Jo Hernandez, 61, of Elkhart passed away on Tuesday, April 11, 2023 at her home surrounded by her family. Carole was born on April 19, 1961 in Plymouth, IN to Thomas and Virginia Gilbert.

Carole worked for Elkhart Products for over 25 years. When she wasn’t working, she was shopping or cooking for her family. When the weather was warm you could always find her in the backyard in her pool.  Carole truly loved to spend time with her family and friends, especially her grandchildren.

Carole is survived by her children, Nicolas (Amanda) Hernandez of Jones, MI and Adrienne Hernandez & Victor Love of Elkhart; her mom Virginia Kauffman of Seymour, IN; grandchildren Nicolas Hernandez Jr., Asia Hernandez, Teela Hernandez, Alayah Love and Elijah Love; her sister Cynthia (Darrell) Clark of Seymour, IN. Carole was preceded in death by her father, Thomas Gilbert.
